Microbiological and physicochemical quality and flavor of hen eggs produced under grazing or conventional systems

Summary: This study compared the quality and flavor of eggs produced under conventional or alternative grazing systems in Costa Rica. The results showed that eggs from the grazing system had higher microbial contamination, different physicochemical parameters, and a different taste compared to conventional eggs.
