Summary: The study investigates the effects of two starch-bound proteins, LESV and ESV1, on phase transition of starch. It is found that LESV promotes the phase transition of starch by aligning glucan double helices, while ESV1 stabilizes the crystalline state of starch. The presence of these proteins in a wide range of species suggests that protein-facilitated glucan crystallization may be a previously unrecognized feature of starch biosynthesis.

Summary: This study used Saccharomyces cerevisiae as a testbed to investigate the functions of plant starch biosynthetic enzymes and create diverse starch-like polymers. The results revealed unexpected effects of glucan biosynthesis on protein abundances and demonstrated that different enzyme ratios influenced glucan structure and solubility.

Summary: The role of SS4 in wheat grain development was investigated through TILLING mutants, which showed severe alterations in starch granule morphology. SS4 deficiency results in compound granule formation, similar to mutants deficient in BGC1. Both SS4 and BGC1 are required for proper control of granule initiation during early grain development, leading to the formation of a single A-type granule per amyloplast.
