Physicochemical properties of Frontiere rice flour and its application in a gluten-free cupcake

Ricardo S. Aleman et al.

Summary: The LSU AgCenter developed a high-protein rice cultivar called Frontiere, which was analyzed for its physicochemical and thermal properties and compared with commercial rice flours. The rheological properties were mainly affected by amylose and protein content, and cupcakes made from different flours showed differences in texture and color. This research provides useful information for ingredient companies interested in using this high-protein rice flour in bakery products.

Effect of ll-cyclodextrins on the physical properties and anti-staling mechanisms of corn starch gels during storage

Ziyang Jia et al.

Summary: The aim of this study was to investigate the effects of ll-cyclodextrin (ll-CD) and hydroxypropyl-ll-cyclodextrin (HP-ll-CD) on the physical and anti-staling properties of corn starch (CS). It was found that the addition of ll-CDs significantly changed the physical properties and anti-staling properties of CS gel. The ll-CDs incorporation delayed the crystallization of CS gel, and the introduction of hydroxypropyl groups (HP-ll-CD) had a better effect.

Modification of starch by polysaccharides in pasting, rheology, texture and in vitro digestion: A review

Shuai Chen et al.

Summary: Starch, a copolymer with unique physicochemical characteristics, has limitations in food applications due to its undesirable properties. Different modification methods are used to improve its performance and expand its application. The addition of small amounts of polysaccharides affects the properties of starch pastes and gels, with factors such as starch type, polysaccharide type, and preparation methods playing a role. This review discusses the changes in starch properties and the mechanism of polysaccharide action on starch after modification.

Recent advances in enzyme biotechnology on modifying gelatinized and granular starch

Yuyue Zhong et al.

Summary: Enzymatic modification of gelatinized starch systems is well-documented, but there is a lack of review comparing the effects of granular vs. gelatinized systems. The catalytic efficiency of starch-acting enzymes is higher on amorphous gelatinized starch than on semi-crystalline granular starch, with potential strategies to enhance efficiency on granular starch including engineered granules and increased specific surface area through various pretreatment methods.

Distinct effects of different α-amylases on cross-linked tapioca starch and gel-improving mechanism

Man Yuan et al.

Summary: This study used two commercial alpha-amylases to improve the gel strength of cross-linked tapioca starch. The results showed that one alpha-amylase mainly attacked amorphous regions, while the other alpha-amylase hydrolyzed both amorphous regions and amorphous lamella of crystalline regions. The analysis of pasting and gelling properties indicated that the alpha-amylase increased the storage modulus of cross-linked starch gels, while the other alpha-amylase formed a solid gel.

Dual modification manipulates rice starch characteristics following debranching and propionate esterification

Rui Wang et al.

Summary: This study investigated the effects of dual modifications of pullulanase debranching and propionylation on rice starch properties, confirming the occurrence of propionylation in starch molecules. The results revealed that AC is an important factor affecting propionylation reaction, and debranching treatment increased the degree of substitution of propionyl starch. Additionally, debranching led to increased crystallinity levels and changes in crystallinity patterns, which are associated with hydrolysis resistance.
