Nutritional composition and anti-nutrients of underutilized Australian indigenous edible halophytes-Saltbush, Seablite and Seapurslane

Sukirtha Srivarathan et al.

Summary: This study analyzed the nutritional composition and anti-nutrients of three Australian Indigenous Edible Halophytes (AIEH). These plants are rich in fiber, minerals, protein, and essential fatty acids, and contain abundant Vitamin C and folate. The anti-nutrients content is lower than spinach, suggesting the potential application of AIEH as a healthy food ingredient.

In Vitro Protein Digestibility of Selected Seaweeds

Goldy De Bhowmick et al.

Summary: Seaweed biomass has potential as an alternative protein source due to its fast growth and beneficial nutrients. This study determined the k-Protein Digestibility-Corrected Amino Acid Score (k-PDCAAS) values of six Irish seaweeds and identified their limiting amino acids. The results showed that the seaweeds contained essential amino acids and taurine, making them suitable as alternative protein sources for human nutrition.

In vitro Bioaccessibility and Intestinal Absorption of Selected Bioactive Compounds in Terminalia ferdinandiana

Saleha Akter et al.

Summary: This study evaluated the bioaccessibility and intestinal absorption of Terminalia ferdinandiana compounds using in vitro models. The results showed an increase in the bioaccessibility of ellagic acid, oxalic acid, and calcium from the gastric phase to the intestinal phase. Additionally, variable rates of intestinal absorption were observed.

Iron Absorption: Factors, Limitations, and Improvement Methods

Elif Piskin et al.

Summary: Iron is essential for various functions in the human body, and its absorption is mainly controlled by the intestines. Achieving efficient iron bioavailability is crucial for preventing iron deficiency anemia. Different forms of iron in food and nutrient interactions can affect iron absorption. Extensive research has been conducted to improve iron bioavailability and combat iron deficiency.

Comparative effects of high pressure processing and heat treatment on in vitro digestibility of pea protein and starch

Alexandra E. Hall et al.

Summary: The effects of high-pressure processing (HPP) and heat treatment on the digestibility of protein and starch in pea protein concentrate (PPC) were investigated. HPP treatment enhanced gastric proteolysis, but had little effect on the overall digestibility of protein and starch.

In vitro bioaccessibility of minerals in fortified infant foods and correlation between mineral absorption facilitators and inhibitors

Gabriel Silverio Filbido et al.

Summary: In this study, the in vitro bioaccessibility of iron, manganese, and zinc in different food sources was evaluated. It was found that ascorbic acid may enhance mineral absorption, while phytates, calcium, and iron may inhibit absorption. Proper fortification agent selection and understanding of the food matrix are important for increasing micronutrient bioaccessibility.
