Effects of chlorine and peroxyacetic acid wash treatments on growth kinetics of Salmonella in fresh-cut lettuce

Summary: Fresh-cut produces are often consumed uncooked, so proper sanitation is crucial for preventing cross contamination. The study investigated the reduction and growth of Salmonella in pre-cut lettuce washed with different disinfectants and stored at different temperatures. The results showed that peroxyacetic acid (PAA) can be an effective alternative to chlorine for disinfecting Salmonella in fresh-cut lettuce. The study also developed models to describe the growth kinetics of Salmonella and its relationship with temperature and disinfectant exposure.

Unravelling effects of red/far-red light on nutritional quality and the role and mechanism in regulating lycopene synthesis in postharvest cherry tomatoes

Summary: The study aimed to investigate the effects of red/far-red light on postharvest quality in cherry tomato fruits and the mechanism of red/far-red light in regulating lycopene synthesis. Red/far-red light irradiation was found to inhibit weight loss and enhance color change during storage, and it also increased the levels of lycopene and beta-carotene compared to the control group. Overexpression of genes PSY, ZDS, and LCY-b was observed in fruits treated with red/far-red light during 33 days of storage. Analysis of genes involved in red/far-red light absorbance (PHYA and PHYB) and mediation (HY5 and PIF3), as well as fruit ripening (ACS2 and RIN), suggests that red/far-red light promotes lycopene accumulation through the phytochrome-mediated signaling pathway by inducing HY5.

Effects of ultrasound-assisted low-concentration chlorine washing on ready-to-eat winter jujube (Zizyphus jujuba Mill. cv. Dongzao): Cross-contamination prevention, decontamination efficacy, and fruit quality

Summary: This study evaluated the effectiveness of ultrasound and chlorine, two low-cost disinfection methods, in disinfecting winter jujube. The results showed that ultrasound alone or chlorine alone were not effective in reducing cross-contamination, but the combination of both methods completely eliminated cross-contamination. Additionally, the use of ultrasound, chlorine, and their combination did not result in any additional quality loss compared to the control.
