Summary: Low-temperature storage significantly affects the mango fruit, causing chilling injury. This study investigated the molecular and biochemical changes in mango cv. Alphonso fruits during low-temperature storage. The results showed increased free radical generation, lipid peroxidation, and protein carbonylation, as well as reduced unsaturated fatty acid content and membrane leakage in the fruits stored at 5 degrees C compared to control and temperature gradient storage (TGS). Gene expression analysis suggested the involvement of fatty acid desaturase, peroxidase, and glutathione reductase in cold stress-induced membrane changes. Furthermore, TGS treatment effectively reduced chilling injury by increasing unsaturated fatty acids and reducing lipid peroxidation and protein carbonylation.

Additionally, exogenous application of methyl jasmonate (MeJA) reduces the rapid rise of PpVIN2 expression, resulting in lower VIN activity and higher sucrose content, thus reducing chilling injury in peach fruit.
