Influences of high hydrostatic pressure on structures and properties of mung bean starch and quality of cationic starch

Summary: Improving the quality of chemical-modified starch is challenging using traditional methods. Therefore, this study utilized mung bean starch with low chemical activity as the raw material, and prepared cationic starch through treatment under high hydrostatic pressure (HHP) at 500 MPa and 40 degrees C. The effects of HHP on the structure and properties of native starch were investigated, demonstrating that high pressure facilitated the penetration of water and etherifying agent into starch granules, resulting in three stages of structural changes similar to mechanochemical effects. Notably, HHP treatment for 5 and 20 minutes significantly improved the degree of substitution, reaction efficiency, and other qualities of cationic starch. Overall, proper HHP treatment could enhance the chemical activity and quality of starch.

Structure and physicochemical properties of low digestible Euryale ferox Salisb. seed starch

Summary: This study investigated the composition, morphology, structure, physicochemical properties, thermal properties, and in vitro digestibility of different varieties of Euryale ferox seed starch. The results showed that NEFS had the highest amylose content, compact granules, high crystallinity, strong thermal stability, and low digestibility. NEFS exhibited the highest resistant starch content, the lowest rapidly digestible starch content, and the slowest hydrolysis kinetic constant among the three varieties. These findings provide valuable information for the potential application of Euryale ferox seed starch in the food industry.

Effects of wet-media milling on multi-scale structures and in vitro digestion of tapioca starch and the structure-digestion relationship

Summary: This study aims to investigate the effects of wet-media milling on the multi-scale structural changes and in vitro digestion of tapioca starch. The results show that milling can break the surface structure of starch granules, increasing the digestion rate. It also disrupts the short-range ordered structure and transforms it into the amorphous phase, further enhancing the digestion rate. With longer milling time, the glycosidic bonds are broken, leading to the production of amylose and amylopectin fragments and continuous increase of the digestion rate. The disruption of the shell barrier on the starch surface is crucial for digestion.

Effect of ll-cyclodextrins on the physical properties and anti-staling mechanisms of corn starch gels during storage

Summary: The aim of this study was to investigate the effects of ll-cyclodextrin (ll-CD) and hydroxypropyl-ll-cyclodextrin (HP-ll-CD) on the physical and anti-staling properties of corn starch (CS). The ll-CDs incorporation delayed the crystallization of CS gel, and the introduction of hydroxypropyl groups (HP-ll-CD) had a better effect.

Low-pressure plasma modification of the rheological properties of tapioca starch

Effect of ball milling treatment on the structural, physicochemical and digestive properties of wheat starch, A- and B-type starch granules

Summary: In this study, the effect of ball milling treatment on the properties of wheat starch was investigated. The results showed that ball milling caused an increase in damaged starch content, amylose content, and solubility. Scanning electron microscopy revealed that increasing ball milling time led to more fragmented granules, while partial granule reaggregation occurred in certain starch samples. Furthermore, ball milling resulted in a less ordered structure and lower gelatinization enthalpy. The starch samples treated by ball milling also exhibited an increase in rapidly digestible starch content, which was negatively correlated with the ordered structure of starch.
