Summary: This study evaluated a biosurfactant produced by Bacillus cereus using waste frying soybean oil as low-cost substrate for its emulsifying capacity, antioxidant activity, and toxicity, showing promising results for food applications. The biosurfactant was successfully incorporated into cookie dough formulations, resulting in cookies with similar physical characteristics as the standard ones but with lower moisture content. This suggests that the biosurfactant has potential as a green emulsifier for food products in line with current market demands for biocompatible items.
