Effect of microencapsulated inoculum of Pichia kudriavzevii on the fermentation and sensory quality of cacao CCN51 genotype

Summary: This study aimed to determine the effective dose of microencapsulated yeast Pichia kudriavzevii to promote the biochemical dynamics and sensory expression of cocoa fermentation. The results showed that the addition of 2% microencapsulated yeast improved the biochemical and sensory characteristics of cocoa, particularly the fruity and floral aromas. Microencapsulation technology is suitable for cocoa starters.

Determination of Genetic Stability in Cacao Plants (Theobroma Cacao L.) Derived from Somatic Embryogenesis Using Microsatellite Molecular Markers (SSR)

Summary: The study assessed the genetic stability of cocoa plantlets propagated by somatic embryogenesis and conventional grafting for two genotypes using SSR analysis. The results showed that the plant populations were genetically equal and no differences in allelic composition were observed between plantlets propagated by different methods.
