Effects of Cathepsins on Gel Strength and Water-Holding Capacity of Myofibrillar Protein Gels from Bighead Carp (Aristichthys nobilis) under a Hydroxyl Radical-Generation Oxidizing System

Effects of deheading and rinsing pretreatment on the quality of white leg shrimp (Litopenaeus vannamei) surimi based on endogenous proteases

Summary: This study investigated the effects of different pretreatments on the quality of white leg shrimp surimi. The results showed that removing the head and rinsing improved the gel strength, texture, whiteness, water distribution, and microstructure of the shrimp surimi gels. The presence of endogenous proteases in the shrimp heads damaged the quality of the surimi gel, but rinsing reduced the proteases and improved the gel quality. The choice of shrimp with or without heads as raw material should consider cost and quality requirements.
