Thermo-induced inversion of water-in-water emulsion stability by bis-hydrophilic microgels

Summary: The study introduced a new type of stabilizers based on bishydrophilic, thermoresponsive microgels containing poly(N- isopropylacrylamide) (pNIPAM) chains with an affinity for both the PEO phase and dextran moieties, which can better control the stability of water-in-water emulsions. Experimental results showed that microgels with higher dextran content exhibited excellent stabilizing properties, with their structure and interaction changing with temperature to influence emulsion stability.

Encapsulation of BSA/alginate water-in-water emulsions by polyelectrolyte complexation

Summary: Water-in-Water emulsions were prepared in aqueous mixtures of an anionic polyelectrolyte (sodium alginate, NaAlg) and a globular protein (bovine serum albumin, BSA). The phase behavior of the combination at different pH intervals was studied, showing phase separation. Capsules were formed by dropping BSA-in-alginate emulsions into Ca2+, Fe3+ or chitosan solutions, with different results depending on the cation or polycation used. Encapsulation with chitosan and longer immersion times resulted in better preservation of the emulsion droplets inside the capsules. Freeze-dried spherical capsules with alginate/Fe3+ or alginate/chitosan shells had smooth surfaces and highly porous interiors, templated by the presence of W/W emulsion droplets.

Electrostatic deposition of polysaccharide onto soft protein colloidal particles: Enhanced rigidity and potential application as Pickering emulsifiers

Summary: In this study, beta-lactoglobulin-based composite nanoparticles with desirable properties were fabricated via electrostatic deposition for use as Pickering stabilizers. The adsorbed PGA molecules effectively hindered the denaturation of beta-lactoglobulin nanoparticles at the oil/water interface, contributing to the stability of the emulsion gels. Results indicate the potential of utilizing soft protein-based particles as particulate emulsifiers for designing Pickering emulsions.
