Effect of processing on the solubility and molecular size of oat β-glucan and consequences for starch digestibility of oat-fortified noodles

Thoa T. L. Nguyen et al.

Summary: The inclusion of oats in white wheat salted noodles can lead to a slower digestion rate, potentially offering health benefits. The process of noodle-making and subsequent cooking affects the concentration and solubility of oat beta-glucan, impacting starch digestibility. This study suggests that interaction between beta-glucan and protein alters noodle microstructure, influencing digestibility.

Influence of germination on bread-making behaviors, functional and shelf-life properties, and overall quality of highland barley bread

Waleed Al-Ansi et al.

Summary: Germinated barley can significantly improve the nutritional value and functional properties of bread, but excessive germination has a negative effect on gluten network formation. Bread made with germinated barley (24 h) had the best impact on bread-making performance, shelf-life, sensory attributes, and overall acceptability.

Supplementation of wheat flour products with wheat bran dietary fiber: Purpose, mechanisms, and challenges

Sen Ma et al.

Summary: This review discusses the effects of supplementing flour products with wheat bran dietary fiber (WBDF) on the quality of flour products. WBDF-enriched flour has a longer shelf life than whole wheat flour and can change the strength of gluten network and protein properties of the dough. Understanding the effects of WBDF on gluten protein can guide the development and production of improved flour products.

Profiling of polyphenols for in-depth understanding of Tartary buckwheat sprouts: Correlation between cultivars and active components, dynamic changes and the effects of ultraviolet B stress

Wei Yang et al.

Summary: This study developed a new metabolomics approach to analyze polyphenols in Tartary buckwheat sprouts grown under different developmental conditions. The results showed that the variety, developmental stage, and environmental conditions of Tartary buckwheat sprouts all affected the levels of polyphenols. Additionally, UV-B radiation significantly influenced the expression levels of polyphenols.

Influence of sprouted oat flour substitution on the texture and in vitro starch digestibility of wheat bread

Hongwei Cao et al.

Summary: The aim of this study was to investigate the effect of sprouted oats substitutions on the in vitro digestibility of starch in wheat bread. The study found that polyphenols and gamma-aminobutyric acid increased, while starch and beta-glucan content gradually decreased in wheat bread enriched with 20% sprouted oat flour. The specific volume of the mixed bread reached its maximum after sprouting for 72 hours. The microstructure revealed that small type B wheat starch and oat starch were wrapped in protein-beta-glucan complexes after baking. This study suggests that properly sprouting has the potential to obtain nutritional bread with low starch digestibility.

Dietary fiber-gluten protein interaction in wheat flour dough: Analysis, consequences and proposed mechanisms

Yun Zhou et al.

Summary: The interactions between dietary fiber and gluten in wheat flour dough are complex and involve alterations in protein structures and bonding patterns. Soluble fibers interact with gluten noncovalently via hydrogen bonding and hydrophobic interactions, while the role of electrostatic interactions in anionic soluble fibers remains unclear. Understanding these interactions can help control the structure and properties of gluten proteins, leading to the design of functional foods with minimized variability.

Xiaoxuan Wang et al.

Summary: This study investigated the effects of adding different amounts of whole quinoa flour (WQF) to wheat breads on bread properties. Results showed that adding WQF decreased the specific volume of breads but did not significantly affect hardness and chewiness, while also affecting starch digestibility.

Sprouted oat as a potential gluten-free ingredient with enhanced nutritional and bioactive properties

Natalia Aparicio-Garcia et al.

Summary: The study found that sprouted oat powder contains higher levels of protein, beta-glucan, thiamine, riboflavin, minerals, amino acids, fatty acids, antioxidants, and prebiotics compared to regular oat grain powder. Additionally, sprouted oat powder showed enhanced protease and alpha-amylase activities, as well as reduced lipase activity, which contributes to its nutritional value and health-promoting properties. These results support the use of sprouted oat powder as a promising gluten-free functional ingredient.

Peter Francis Raguindin et al.

Summary: Our study found that oat and buckwheat contain a variety of bioactive compounds, with differences in the content of certain compounds between the two grains. However, methodological heterogeneity across studies hindered the possibility of meta-analysis, highlighting the need for standardization in future research. These findings will further encourage exploration of metabolites related to these phytochemicals and their roles in human health.
