Reconstitution of the Flavor Signature of Laobaigan-Type Baijiu Based on the Natural Concentrations of Its Odor-Active Compounds and Nonvolatile Organic Acids

Summary: This study analyzed the nonvolatile organic acids (NVOAs) and odorants associated with the Laobaigan flavor type of Baijiu. It was found for the first time that NVOAs have effects on the volatiles in Baijiu, influencing the overall flavor and intensity of certain aroma qualities. The reconstitution of odor-active volatiles and NVOAs showed a closer similarity to the original Baijiu sample compared to samples containing only odor-active volatiles, with alcoholic and sweety flavors reduced and other flavors amplified.

The Maillard Reaction as Source of Meat Flavor Compounds in Dry Cured Meat Model Systems under Mild Temperature Conditions

Summary: This study aimed to investigate the impact of mild curing conditions on the generation of volatile compounds responsible for cured meat aroma in simulated dry fermented sausages. The results demonstrated that temperature was the primary factor affecting volatile production during the drying stages, followed by amino acid concentration and a(w) value. The study revealed that volatile compounds are generated via Maillard reaction from free amino acids under mild curing conditions used for dry cured meat product production, with a(w) playing an important role in promoting the formation of flavor compounds.

Summary: Chinese dry-cured hams have unique aroma characteristics appreciated by local consumers. Analysis of volatile organic compounds (VOCs) using different techniques showed that Xuanen ham from Yunnan Province had a distinct smoky aroma, while aldehydes in Sanchuan ham played a significant role in its flavor profile. Principal component analysis (PCA) and multiple factor analysis (MFA) using GC-IMS or GC x GCToF-MS data were effective in differentiating dry-cured hams from different regions.
