Comprehensive identification and hydrophobic analysis of key proteins affecting foam capacity and stability during the evolution of egg white foam

Haobo Jin et al.

Summary: Label-free quantitative proteomics techniques were used to identify key proteins associated with egg white foam properties. The hydrophobicity, structure, and spatial arrangement of these proteins influenced their behavior at the air-water interface. Ovalbumin, ovostatin, ovomucoid, and lysozyme played crucial roles in foam capacity and stability.

Advances in Biosensors for Continuous Glucose Monitoring Towards Wearables

Lucy Johnston et al.

Summary: Continuous glucose monitors for non-invasive monitoring of diabetes are constantly being developed and improved, with increasing exploration of biosensing technologies using different bodily fluids to accurately measure blood glucose concentrations. Challenges still exist in terms of sensitivity at high or low glucose concentrations, but recent developments such as contact lenses or mouthguards show potential for improving wearability. This review summarizes the advances in wearable glucose biosensors over the past 5 years and discusses perspectives on the development of wearables for glucose biosensing.
