Physicochemical properties and structure of starches of foxnut (Euryale ferox Salisb.) from India and its application

Maibam Baby Devi et al.

Summary: The study focused on investigating the physicochemical characteristics and potential applications of Euryale ferox kernel starch (EFKS) in food industries. Findings showed that EFKS exhibited unique properties such as high pasting temperature and polyhedral granule shape, with the ability to replace up to 20% of wheat flour in bread making without compromising sensory attributes. The research highlighted the novel starch source's immense potential for various food and non-food applications, making it a lucrative option for entrepreneurs.

Technofunctional, rheological, thermal and structural properties of gorgon nut (Eurayle ferox) as affected by drying temperature

Mohmad Sayeed Bhat et al.

Summary: The research found that drying gorgon nut flour at different temperatures significantly altered its technofunctional and rheological properties, including water and oil absorption capacities, viscosity, swelling power, solubility, and more. Additionally, it was observed that gorgon nut flour exhibited non-Newtonian behavior during drying and showed elastic behavior with increasing temperature.

Investigation of Quinoa Seeds Fractions and Their Application in Wheat Bread Production

Ionica Cotovanu et al.

Summary: The study aimed to investigate the influence of quinoa fractions on the chemical components of wheat flour, dough rheological properties, and baking performance of wheat bread. The microstructure and molecular conformations of quinoa fractions were dependent on the particle size. The highest quinoa fractions addition levels and particle size led to the highest dough viscoelastic moduli, while gradual increase of quinoa fractions determined dough hardness increase and adhesiveness decrease.

Effects of wheat flour particle size on flour physicochemical properties and steamed bread quality

Jinyue Pang et al.

Summary: The study found that reducing the particle size of wheat flour increases the damaged starch content and enhances the maximum tensile resistance of dough. The extensibility of dough reaches its maximum in samples with medium particle diameter (78 and 66 μm). Additionally, finer flour granulation can strengthen the gluten network.
