Influence of Soybean Dietary Fiber on the properties of Konjac Glucomannan/κ-Carrageenan Corn Oil Composite Gel

Summary: The addition of soybean dietary fiber (SDF) improved the color, hardness, chewiness, water-and oil-holding capacities, melting temperature, thermal stability, storage modulus, and apparent viscosity of konjac glucomannan/kappa-carrageenan composite gel. SDF formed a spatial framework with KGM and kappa-CA, disrupting the cohesive structure and leading to an uneven gel structure. The results have guiding significance for the development of solid fat products simulated by SDF/KGM/kappa-CA composite gel.
