Inhibitory effects of Chinese quince fruit proanthocyanidins with different polymerisation degrees on the formation of heterocyclic aromatic amines in chemical model systems

Shou-Tao Wang et al.

Summary: Proanthocyanidins extracted from Chinese quince fruits showed significant and dose-dependent inhibition on the formation of heterocyclic aromatic amines in chemical models, with the fraction richest in oligomers exhibiting the most prominent effect. The mean degree of polymerisation of proanthocyanidins was negatively correlated with the inhibition of heterocyclic amine formation.

Study on the interaction mechanism of purple potato anthocyanins with casein and whey protein

Shengxiang Gong et al.

Summary: Investigating the interaction mechanism of casein and whey protein with anthocyanins from purple potato flour revealed that casein had a stronger binding affinity with anthocyanins, the binding was spontaneous, and it affected the conformational structures of the proteins.

Evaluation of the binding behavior of olmutinib (HM61713) with model transport protein: Insights from spectroscopic and molecular docking studies

Song-Bo Kou et al.

Summary: S C Olmutinib is a novel third-generation tyrosine kinase inhibitor that selectively targets epidermal growth factor receptor mutations. The binding behavior of OMT with bovine serum albumin was studied, revealing hydrophobic interactions, hydrogen bonds, and van der Waals forces as key factors in the complexation process. OMT tended to bind to subdomain IB of BSA, causing changes in BSA's conformation and secondary structure as observed through fluorescence, FT-IR, and UV-Vis studies.

Protein-polyphenol functional ingredients: The foaming properties of lactoferrin are enhanced by forming complexes with procyanidin

Changhong Li et al.

Summary: After mixing procyanidin with lactoferrin, solution turbidity and intrinsic fluorescence quenching increased, while surface hydrophobicity of lactoferrin was reduced. This binding interaction led to significant changes in the structure of both polyphenol and protein, with thermodynamic analysis indicating spontaneous interaction mainly driven by entropy changes.

Effect of Freeze-Thaw Cycles on the Oxidation of Protein and Fat and Its Relationship with the Formation of Heterocyclic Aromatic Amines and Advanced Glycation End Products in Raw Meat

Xingge Wu et al.

Summary: The research aimed to study the impact of freeze-thaw cycles on porcine longissimus protein and lipid oxidation, as well as HAAs and AGEs. After seven cycles, there was an increase in Norharman and Harman, as well as N epsilon-carboxyethyllysine and N epsilon-carboxymethyllysine, while glucose, creatine, and creatinine decreased. The findings suggest that oxidation and the Maillard reaction during freeze-thaw cycles promote the production of HAAs and AGEs in raw pork.

Effect of proanthocyanidin-rich extracts from Chinese quince (Chaenomeles sinensis) fruit on the physical and oxidative stability of sunflower oil-in-water emulsions

Ting-Ting Lv et al.

Summary: Chinese quince proanthocyanidins show antioxidative and stabilizing effects on sunflower oil-in-water emulsions, with water extract exhibiting the highest efficacy in retarding lipid oxidation. Lower molecular weight and degree of polymerisation positively affect the antioxidant activity of proanthocyanidin-rich extracts, making them potential natural antioxidants for improving emulsion stability.

Heterocyclic Amine Formation and Mitigation in Processed Meat and Meat Products: A Mini-Review

Samuel Ayofemi Olalekan Adeyeye et al.

Summary: Heterocyclic amines (HCAs) are mutagenic compounds formed in meat cooked at high temperatures from amino acids, creatine, sugars, pyrrole, and pyridine derivatives. To reduce HCA formation during heat processing, techniques such as recipe adjustments, thermal processing conditions modifications, flavorings addition, microwave heating pretreatments, and naturally occurring and artificial antioxidants addition have been employed.
