Novel antioxidant peptides from protein hydrolysates of scallop (Argopecten irradians) mantle using enzymatic and microbial methods: Preparation, purification, identification and characterization

Summary: The aim of this study was to isolate, purify, identify, and characterize novel antioxidant peptides from protein hydrolysates of scallop mantle. The antioxidant peptides were obtained through protein hydrolysis and microbial fermentation. The purified peptides showed high oxygen radical absorbance capacity (ORAC) and their scavenging activity depended on the content and position of certain amino acids in the sequences. LC-MS/MS analysis identified several peptides with antioxidant properties.
