Summary: Currently, the common high temperature-long time thermal treatment used in commercial orange juice negatively affects the quality. Therefore, exploring new non-thermal sterilization techniques to produce high-quality orange juice is significant. The study compared the effects of thermosonication, thermosonication combined with epsilon-polylysine, thermosonication combined with nisin, and high temperature-long time treatment on the microflora in orange juice. Based on the results, the combination of thermosonication and epsilon-polylysine treatment showed better control of microorganisms and inactivation of endogenous enzymes, while maintaining sensory quality and functional characteristics of orange juice.

Impact of different processing techniques on reduction in oil content in deep-fried donuts when using kombucha cellulose hydrolysates

Summary: The efficiency of kombucha cellulose in reducing oil content in deep-fried donuts was evaluated using enzymolysis and microwave-assisted enzymolysis methods. The resulting kombucha cellulose hydrolysates had higher water-holding capacity and lower oil-holding capacity compared to intact kombucha cellulose. Substituting 2% flour with kombucha cellulose hydrolysates significantly reduced the oil content in the donuts without affecting their texture. In vitro digestion results suggested no adverse health effects from using kombucha cellulose hydrolysates compared to traditional ingredients.

Mango and carrot mixed juice: a new matrix for the vehicle of probiotic lactobacilli

Summary: This study evaluated the viability of Lactobacillus rhamnosus, Lactobacillus plantarum and Lactobacillus acidophilus in mango and carrot mixed juices, with L. plantarum showing greater resistance to gastrointestinal conditions. Higher concentration of carrot pulp in juices increased microbial viability, while juices with more mango pulp were more accepted. The study suggests that mango and carrot mixed juice can be a good vehicle for probiotic bacteria, meeting the needs of consumers seeking functional, healthy, non-dairy and low-sugar foods.

Effects of membrane pore size and transmembrane pressure on ultrafiltration of red-fleshed dragon fruit (Hylocereus polyrhizus) juice

Summary: This study found that ultrafiltration with a 10 kDa membrane at 3 bar was the most effective method for clarifying red-fleshed dragon fruit juice, with high permeate flux and low retention of betacyanins and phenolic compounds. The main cause of membrane fouling was cake resistance, while reversible and irreversible resistances had lesser impacts. Characterization of the UF membrane showed minimal alterations in chemical structure and surface morphology after use and washing, indicating successful clarification of fruit juice without affecting heat-sensitive compounds.
