Study of rapeseed oil gelation induced by commercial monoglycerides using a chemometric approach

Aurelie Monie et al.

Summary: Commercial oleogelators containing monoglycerides (MGs) are complex mixtures with gelling properties affected by the oil used and concentration. A chemometric approach was developed to identify key parameters in the gelling process. Results showed that specific isomers and unsaturated/saturated fatty acid ratios have different effects on G' at low and high oleogelator concentrations.

Isothermal crystallization of anhydrous milk fat in presence of free fatty acids and their esters: From nanostructure to textural properties

Mathilde Bayard et al.

Summary: This study employed a multiscale approach to investigate the impact of low concentration pure exogenous compounds on the crystallization of TAGs in AMF. The results showed that the presence of additives did not alter the nanostructure of TAG crystals, but significantly changed the microstructure of AMF.

Crystallization of emulsified anhydrous milk fat: The role of confinement and of minor compounds. A DSC study

Mathilde Bayard et al.

Summary: By adding different compounds to anhydrous milk fat-in-water emulsions, the crystallization kinetics can be modulated, affecting the melting characteristics. Sodium caseinate stabilizes the crystallization and melting process of the emulsion. Short-chain fatty acids have no significant impact on crystallization, while long-chain acids and glycerides can influence the rate and type of crystallization.

Enzymatic hydrolysis of rapeseed oil with a non-GMO lipase: A strategy to substitute mono- and diglycerides of fatty acids and improve the softness of sponge cakes

Aurelie Monie et al.

Summary: Mono- and diglycerides of fatty acids (MDGs) are commonly used in sponge cake production to prevent staling. An enzymatic strategy was used to generate these compounds from rapeseed oil and a non-GMO lipase. The best results were obtained with a 24-hour enzymatic reaction and dilution in unmodified rapeseed oil between 5 and 25 g/100 g.

Whipping properties and stability of whipping cream: The impact of fatty acid composition and crystallization properties

Pingli Liu et al.

Summary: The study showed that fats rich in lauric and myristic acids result in dense crystal networks, promoting partial coalescence and improving cream quality, while fats rich in palmitic and oleic acids lead to weak crystal networks, affecting cream stability.
