Comparative studies on the correlation of Campylobacter spp. at different stages in the broiler production chain

O. Dubovitskaya et al.

Summary: This study aimed to evaluate the quantitative contamination of broilers with Campylobacter spp. at different stages of production, showing that the counts were generally lower in fecal samples at pre-harvest level compared to cecal samples after slaughter and skinless breast fillet samples were less contaminated at slaughter level. Additionally, it was found that breast fillets and legs had lower Campylobacter spp. counts at the end of shelf-life compared to the beginning of storage.
