Summary: Artemisia sphaerocephala polysaccharide (ASKP) contains two fractions, 60P and 60S, with different molecular weights. It was found that the higher molecular weight 60P showed better interface adsorption and gelation activities compared to the lower molecular weight 60S. Emulsion stability and droplet filling in gel network highly depended on the concentration of medium chain triglyceride (MCT).

Ultrasound-induced red bean protein-lutein interactions and their effects on physicochemical properties, antioxidant activities and digestion behaviors of complexes

Study on the gel properties, interactions, and pH stability of pea protein isolate emulsion gels as influenced by inulin

Summary: The gel properties of underutilized plant proteins, such as pea protein isolate (PPI), can be improved by adding inulin (a prebiotic). The highest gel strength and water-holding capacity were reached with an inulin concentration of 50 g/L, indicating that inulin can enhance the gel properties of PPI-based emulsion gels. Scanning electron microscopy revealed that inulin changed the emulsion gel microstructure, showing a transition from porous with a rough surface to dense with a smooth surface.
