Poly-γ-glutamic acid enhanced the drought resistance of maize by improving photosynthesis and affecting the rhizosphere microbial community

Haizhen Ma et al.

Summary: This study investigated the effect of exogenous application of gamma-PGA on drought tolerance of maize and its mechanism. The results showed that gamma-PGA significantly increased the dry weight, ABA, soluble sugar, proline, and chlorophyll contents, as well as the photosynthetic rate of maize under severe drought stress. The study also demonstrated that gamma-PGA improved root development and affected the rhizosphere microbial community. This research revealed the potential of using gamma-PGA to enhance crop drought resistance.

Xiangwei Zhu et al.

Summary: Carboxymethyl chitosan (CMCh), an ampholetic chitosan derivative, exhibits cryo-protective properties in frozen dough by restricting water migration, delaying protein deterioration, and improving textural properties of frozen dumpling wrappers. Furthermore, CMCh with higher degree of carboxymethyl substitution shows better cryo-protective effects compared to lower DS CMCh.

Interactions between wheat globulin and gluten under alkali or salt condition and its effects on noodle dough rheology and end quality

Li-Li Zhang et al.

Summary: The influences of wheat globulin on dough and noodle quality under alkali or salt condition were investigated, and the protein interactions were revealed. Results showed that the addition of globulin significantly improved the dough viscoelasticity and noodle texture under alkali condition, with less significant enhancement under salt condition. The study also demonstrated the interactions between globulin and gluten, including the decrease in surface hydrophobicity and the increase in β-sheets structure.

Thermal-aggregation behavior of gluten in frozen dough induced by ε-poly-L-lysine treated yeast

Lu Lu et al.

Summary: The use of epsilon-poly-L-lysine treated yeast (PTY) enhances freeze-thaw tolerance and gas retention in frozen dough, reducing the loss of gas retention ability caused by multiple freeze-thaw cycles. PTY leads to higher degree of covalent crosslinking and better aggregation ability in frozen dough compared to regular yeast.

Changes of aggregation and structural properties of heat-denatured gluten proteins in fast-frozen steamed bread during frozen storage

Xiaojie Qian et al.

Summary: The research aimed to clarify the deterioration mechanism of heat-denatured gluten proteins during frozen storage by examining changes in aggregation and structural characteristics. Results showed an increase in soluble protein content and free sulfhydryl, indicating depolymerization of proteins and breakdown of glutenin-gliadin cross-linking. Additionally, frozen storage led to structural changes and easier depolymerization of proteins in the steamed bread system compared to the steamed gluten system.

Impact of wheat globulin addition on dough rheological properties and quality of cooked noodles

Li-Li Zhang et al.

Summary: The addition of globulin impacts the functional and protein structural properties of dough and cooked noodles, increasing hardness and resistance while improving cooked noodles' extensibility. The added globulin weakens S-S bonds in the gluten network and accelerates protein aggregation, resulting in a more rigid protein network structure and a transformation in protein conformation upon cooking.
