Insoluble bacterial cellulose nanofibrils/soy protein isolate (BCNFs/SPI) complexes were fabricated and used to stabilize Pickering emulsions, resulting in improved stability and reduced release of free fatty acids.

Properties of soybean protein isolate/curdlan based emulsion gel for fat analogue: Comparison with pork backfat

Summary: This study presents a method to fabricate an analogue of pork backfat using a combination of emulsion and gel. By using soybean protein isolate and curdlan, an emulsion gel was prepared and its microstructures, rheology properties, water holding capacity, and freeze-thawing stability were investigated. The results showed that the emulsion gel was thermal irreversible and the oil content significantly affected its water holding capacity and freeze-thawing stability. Compared with pork backfat, the emulsion gel with 10 wt% oil content exhibited no significant differences in hardness, chewiness, springiness, and gel strength.

Spirulina platensis protein isolate nanoparticle stabilized O/W Pickering emulsions: Interfacial adsorption and bulk aggregation

Summary: In this study, food-grade Spirulina platensis protein Pickering nanoparticles were successfully prepared using a simple method. The nanoparticles exhibited excellent stability in emulsions, and their concentration and oil phase fraction played a crucial role in enhancing emulsion stability. The presence of supported interfaces and regular polygonal shape deformations significantly influenced the stability of emulsions.

Researchers have developed optimized indirect methods using hydrocolloids to structure oil, resulting in gelled emulsions and oleogels, creating novel healthy food structures based on polysaccharides, proteins, and their supramolecular interactions, which can generate various types of healthy colloidal systems with distinct sensory, texture, and stability properties.

Analysis showed distinct peaks for the oleogel and hydrogel phases in all bigel samples, without new thermal events, indicating a lack of interactions between the components.
