Rapid and non-destructive spatially offset Raman spectroscopic analysis of packaged margarines and fat-spread products

Ana M. Jimenez-Carvelo et al.

Summary: Spatially offset Raman spectroscopy (SORS) is a novel technique that allows measurement of samples through packaging and recovery of spectra without surface layer interference. This study used a portable SORS equipment to measure margarines and fat spreads, and chemometric tools were used for data analysis. The results showed that SORS data outperformed conventional Raman spectroscopy (CRS) in classification models and quantitative analysis, demonstrating the potential of SORS as a fast, non-destructive, and non-invasive analytical technique in food analysis.

Spatially offset Raman spectroscopy: A convenient and rapid tool to distinguish cheese made with milks from different animal species

Saeideh Ostovar Pour et al.

Summary: The study demonstrated the potential of using SORS technology to distinguish cheeses of different animal origins, showing its capability in food authenticity identification. By analyzing components such as protein, fat content, phospholipids, and carotenoids, different types of cheeses were successfully differentiated. This rapid, non-destructive method has the potential to become an important tool for future food quality monitoring and authenticity detection.

Summary: Spatially offset Raman spectroscopy (SORS) technique overcomes the limitations of material analysis through packaging by collecting Raman scattered signals at a spatially offset from the excitation laser spot. With suitable multivariate data analysis, SORS enables rapid and non-invasive measurements through containers for quality control and authentication of raw materials and end products.

A Review on the General Cheese Processing Technology, Flavor Biochemical Pathways and the Influence of Yeasts in Cheese

Xiaochun Zheng et al.

Summary: Cheese, with a long history, contains a range of distinctive flavors due to the microorganisms playing important roles during both cheese production and ripening. The diverse processing technology and complex microbial community structure in cheeses from different countries contribute to the fluctuation in cheese flavor. Studying the relationship between microbial structure and flavor formation is key to solving the unstable quality of cheese.

Fatty acid profiling of bovine milk and cheese from six European areas by GC-FID and GC-MS

Daniela Eisenstecken et al.

Summary: By studying the fatty acid composition of milk from six European areas and the changes during cheese production, the geographical areas were differentiated based on important fatty acid classes such as odd- and branched-chain fatty acids. The fatty acid profile remained constant during cheese production, while aroma compounds were identified as biomarkers for the ripening methods used (foil and smear ripening).
