Food safety issues in fresh produce supply chain with particular reference to sub-Saharan Africa

Summary: Developing countries, especially sub-Saharan Africa, face the greatest burden of food-borne illnesses with animal-source foods and fresh produce being the leading causes. Pathogenic bacteria, viruses, and chemical contaminants are the primary agents of food-borne illnesses in SSA. Improving food safety practices, post-harvest handling, market infrastructure, and technology adoption can enhance food safety in SSA.
