Molecular basis of the formation and removal of fruit astringency

Wei Wu et al.

Summary: Astringency is mainly generated by the binding of tannins with proteins in the mouth, causing a dry puckering mouthfeel. While moderate concentrations of tannins can improve fruit flavor, excessive tannins lead to undesirable astringency. Understanding the genetic factors behind astringency formation and removal is crucial for improving fruit quality.

Variation of organic acids in mature fruits of 193 pear (Pyrus spp.) cultivars

Jingyi Wu et al.

Summary: Organic acids play important roles in the flavor and nutrition of pears. Different pear cultivars have varying organic acid contents, with Pyrus ussuriensis having the highest total acid content. Additionally, there is a positive correlation between organic acid content and pear fruit ripening period.

Exploring critical metabolites of honey peach (Prunus persica (L.) Batsch) from five main cultivation regions in the north of China by UPLC-Q-TOF/MS combined with chemometrics and modeling

Qianqian Li et al.

Summary: This study characterized the metabolic profile of honey peach using UPLC-QTOF/MS and identified 58 potential key markers that revealed significant differences among different cultivation regions. The critical metabolites, such as quercitrin, plantagoside, 3-p-coumaroylquinic acid, procyanidin, and quinic acid, were found to have positive impacts on honey peach. The developed PLS-DA model showed acceptable predictive ability for the origin traceability of peach samples and provided guidance for honey peach breeders.

Post-veraison different frequencies of water deficit strategies enhance Reliance grapes quality under root restriction

Feng Leng et al.

Summary: Two water deficit treatments with different frequencies but the same total amount were performed to explore their effects on grape berries under root restriction. The treatments increased sugar content and decreased organic acid content in grapes, while promoting the accumulation of beneficial substances. Water deficits also increased phenols and aroma compounds, especially esters, in grapes. The treatment with lower frequency showed better results.
