Untargeted analysis of microbial metabolites and unsaturated fatty acids in salmon via hydrophilic-lipophilic balanced solid-phase microextraction arrow

Jing Yu et al.

Summary: This paper presents the development of a hydrophilic-lipophilic balanced solid phase microextraction arrow that offers better extraction performance than other commercial devices. Two operational models, headspace microextraction and direct immersion, were compared. The results showed that the content levels of volatile metabolites increased with longer storage times in headspace microextractions, indicating an increase in spoilage-associated bacteria activity. For direct immersion tests, important nutrients were efficiently extracted from salmon fillets. This method provides a simple and easy time-domain monitoring strategy for testing the freshness and quality of salmon for consumers.
