Impact of heat treatment of milk on acid gelation

Summary: Heat treatment of milk is used to increase viscosity and improve texture in cultured dairy products, with denatured whey proteins playing a key role in causing textural changes. Acid gels made from heated milk have higher storage moduli and lower fracture strain due to alterations in gel microstructure and the contribution of covalent disulphide bonding. The loss of calcium phosphate crosslinks in heated milk gels results in greater mobility within casein particles.
