Changes in the thermal, pasting, morphological and structural characteristic of common buckwheat starch after ultrafine milling

Summary: The study found that superfine milling can change the morphological structure of common buckwheat starch, decreasing crystallinity while increasing light transmittance, swelling power, and solubility. Superfine milling also improved the water holding capacity of buckwheat starch, providing valuable information for starch modification and expanding its applications.
