Summary: The identification of antioxidant, antidiabetogenic and antimicrobial peptides from sorghum spent grain (SSG) protein hydrolysate was performed, with fractions F2, F5, and F6 showing the highest bioactivity after fractionation and evaluation. LC-ESI-Q-TOF tandem mass spectrometry revealed six new peptides with high bioactivity in these active fractions. This study also demonstrated the presence of antibacterial peptides in sorghum proteins for the first time.

Results showed that BSDF had higher glucose content, lower other sugars content, higher glucose adsorption capacity, and better ability to delay glucose diffusion compared to WSDF, making it more effective for reducing postprandial blood glucose levels and enhancing antioxidant activity in food products.

Summary: This study aimed to analyze the chemical composition of different parts of broccoli by-products and develop methods to improve the functional properties of dietary fiber from these by-products. Enzymatic treatment showed promising results in increasing specific functional activities, such as solubility and glucose adsorption capacity. Supercritical fluids treatment improved swelling, water retention, and lipid absorption capacities. The use of enzyme treatments also enhanced antioxidant capacity and stimulated the growth of beneficial bacteria.

Effect of four modification methods on adsorption capacities and in vitro hypoglycemic properties of millet bran dietary fibre

Summary: The study aimed to improve the adsorption capacities and hypoglycemic properties of millet bran dietary fibre (MBDF) through four different modification methods. While the modifications enhanced certain properties of MBDF, such as soluble dietary fibre content and water swelling ability, they also resulted in decreases in polyphenol content and glucose-binding ability. Scanning electron microscopy and Fourier-transformed infrared spectroscopy analysis confirmed changes in the structure of MBDF caused by the modification methods.
