Effect of Lactobacillus plantarum on functional characteristics and flavor profile of fermented walnut milk

Effect of sequential or ternary starters-assisted fermentation on the phenolic and glucosinolate profiles of sauerkraut in comparison with spontaneous fermentation

Summary: This study compared the effectiveness of two novel starter-assisted sauerkraut fermentations with spontaneous fermentation. The sequential and ternary fermentations resulted in a higher number of lactic acid bacteria, improved acidification and sugar utilization, and enhanced conversion of phenolic compounds. Short fermentation using the two starter-assisted methods had only slight effects on the sensory profile and structural integrity of sauerkraut, and did not affect the color lightness.

Characterization and functional of four mutants of hydroxy fatty acid dehydrogenase from Lactobacillus plantarump-8

Summary: The hydroxy fatty acid dehydrogenase CLA-DH from Lactobacillus plantarum p-8 and its mutant variants were expressed and studied. The study found that CLA-DH has catalytic activity to convert ricinoleic acid into 12-oxo-cis-9-octadecenoic acid, with optimum reaction temperature at 45 degrees C and optimum pH at 6.0-7.0. The study also demonstrated the effect of certain metal ions on the enzyme activity.

Summary: In this study, it was found that a probiotic strain contained increased levels of 3-hydroxyoctadecaenoic acid (C18-3OH), which was shown to decrease colitis in mice and was associated with anti-inflammatory properties of prebiotic fructooligosaccharides (FOS). The concentration of C18-3OH was correlated with an increase in specific bacterial genera in the microbiota. This suggests that C18-3OH production by bacteria could play a role in the anti-inflammatory properties of probiotics and in microbiota/host interactions.

Summary: Omnivores had significantly higher FAHFA levels than vegetarians/vegans, overfeeding with saturated fatty acids led to a significant increase in FAHFA levels, and obese patients had lower FAHFA levels than non-obese controls. Surgery-induced weight loss increased 9-OAHSA levels, while differences in FAHFA levels were found between adolescents and adults or elderly, with no detectable relation with sex and diabetic status.
