Fine mapping and cloning of the major seed protein quantitative trait loci on soybean chromosome 20

Christina E. Fliege et al.

Summary: Soybean is the most important source of protein meal globally, with the quantitative trait loci (QTL) cqSeed protein-003 on chromosome 20 exhibiting the highest additive effect among all protein QTLs in this crop. Through genetic mapping and candidate gene downregulation, the insertion/deletion variant in Glyma.20G85100 is identified as the likely gene underlying this significant QTL.

Antioxidant capacity of 12 major soybean isoflavones and their bioavailability under simulated digestion and in human intestinal Caco-2 cells

Mi-Seon Kim et al.

Summary: This study evaluated the antioxidant capacity, bioaccessibility, and bioavailability of 12 soy isoflavones (SIs). The results showed that SIs were stable under gastric digestion conditions but unstable under small intestinal digestion conditions for acetyl and malonyl conjugates. SI aglycones had higher permeability and cellular accumulation than their glucosides. A small amount of intact SI conjugates were found in the cell and in the basolateral side of each Transwell.

Structure characterization of soybean peptides and their protective activity against intestinal inflammation

Lingrong Wen et al.

Summary: Soybean peptides, as functional foods, have impressive health benefits. The structure characteristics of peptides are closely related to these benefits. In this study, soybean peptides were produced using enzymatic hydrolysis and their anti-inflammatory activities were investigated. The results showed that soybean peptides could promote cell proliferation and alleviate LPS-induced inflammation by reducing the production and expression of inflammatory molecules.

Understanding the Gastrointestinal Behavior of the Coffee Pulp Phenolic Compounds under Simulated Conditions

Silvia Canas et al.

Summary: Coffee pulp is a by-product that contains antioxidant phytochemicals including phenolic compounds and caffeine. However, the antioxidant properties of phenolic compounds are limited by their bioaccessibility, bioavailability, and biotransformation during gastrointestinal digestion. This study found that the coffee pulp extract had higher concentrations of phenolic compounds, mainly phenolic acids, and caffeine. The antioxidant capacity increased during digestion, but flavonoids were mostly degraded. Phenolic acids and caffeine were highly bioaccessible, while flavonoids were degraded. These results suggest that coffee pulp can be a potential antioxidant food ingredient.

Soy Protein: Molecular Structure Revisited and Recent Advances in Processing Technologies

Xiaonan Sui et al.

Summary: Rising health concerns and increasing obesity levels have led to a shift in consumer preferences towards plant-based proteins, with soy protein emerging as a versatile and well-balanced alternative to animal protein. Advances in processing technologies have enabled the production of a wide variety of functional foods and ingredients from soy proteins, offering consumers a diverse array of options in the modern food industry. The review also explores the structural changes induced by soy protein processing and revisits the molecular structure of soy protein, particularly the crystal structures of beta-conglycinin and glycinin.

Bioactive Compounds in Oxidative Stress-Mediated Diseases: Targeting the NRF2/ARE Signaling Pathway and Epigenetic Regulation

Muthu Thiruvengadam et al.

Summary: Oxidative stress is caused by an imbalance between oxidants and antioxidant defense systems. NRF2 plays a crucial role in regulating phase II antioxidant enzymes and is considered a promising target against diseases like diabetes, fibrosis, neurotoxicity, and cancer. Dietary phytochemicals can modulate NRF2/ARE signaling and prevent various diseases, with potential mechanisms including inhibiting inflammatory mediators and regulating NRF2 signaling through various kinases and epigenetic modulation. Further investigation into upstream signaling molecules and the effects of phytochemicals are still needed.
