Calcium Delivery Systems Assembled using Antarctic Krill Derived Heptapeptides: Exploration of the Assembly Mechanism, In Vitro Digestion Profile, and Calcium Absorption Behavior

Summary: A novel heptapeptide, QEELISK, derived from Antarctic krill, was used to assemble a calcium delivery system. QEELISK demonstrated higher calcium binding capacity compared to other heptapeptides. QEELISK-Ca showed superior stability and underwent disaggregation and self-assembly during in vitro digestion. Calcium chelation improved the digestive stability of QELEISK, and QELEISK-Ca exhibited a significant enhancement of calcium absorption in the duodenum and ileum, suggesting its potential for calcium ion transportation through the gastrointestinal tract.
