Emulsifying properties of sugar-based surfactants prepared by chemoenzymatic synthesis

Summary: Sugar fatty acid esters (SFAEs) are non-ionic surfactants that can be synthesized from inexpensive natural resources. Depending on their carbon chain length and sugar head group, SFAEs have a wide range of hydrophilic-lipophilic balance values, making them suitable for various industrial applications. This study evaluated the interfacial properties and emulsifying performance of three sugar-based surfactants, with 6-O-palmitoyl- and 6-O-stearoyl-1-O-butyl glucopyranosides found to be the most efficient.

Effect of Interfacial Activity of Eugenol and Eugenol Esters with Different Alkyl Chain Lengths on Inhibiting Sunflower Oil Oxidation

Summary: This study evaluated the effects of eugenol esters with different alkyl chain lengths and combinations of eugenol + eugenol esters on sunflower oil oxidation. It was found that eugenyl acetate exhibited higher antioxidant activity in sunflower oil, while eugenol esters showed decreased activity with longer alkyl chains. Synergistic and antagonistic effects were observed with different eugenol esters combinations. Additionally, the ester combinations were able to stabilize reverse micelles and reduce temperature-related effects on oil oxidation.
