Chemical characterization and nutritional quality investigations of healthy extra virgin olive oil flavored with chili pepper

Mohamed Salem Zellama et al.

Summary: The study investigated the biological activities, chemical composition, and quality characteristics of Tunisian EVOO flavored with chili pepper. The results showed that the flavored EVOO exhibited higher antioxidant activity and antimicrobial properties, with minor changes in the content of some minor compounds. Overall, the quality parameters remained unaffected, indicating the potential for innovative food technology in new food products.

Flavoured and fortified olive oils-Pros and cons

Sandra Lamas et al.

Summary: Flavouring and fortifying virgin olive oils is a growing commercial trend that enhances the sensory profile and chemical composition of the oils. These practices increase the natural richness of bioactive compounds and contribute to the nutritional enrichment of the oil. However, excessive flavouring or fortification may result in unpleasant sensory sensations.

Varietal authentication of virgin olive oil: Proving the efficiency of sesquiterpene fingerprinting for Mediterranean Arbequina oils

Berta Torres-Cobos et al.

Summary: This study evaluated the suitability of sesquiterpene hydrocarbon (SH) fingerprint as a cultivar marker for Virgin olive oil (VOO), focusing mainly on Mediterranean Arbequina oils. The study analyzed the SH profile of over 400 VOOs from 6 countries and built classification models to distinguish 'Arbequina' oils from other cultivars with a promising overall correct classification rate of 95.1% in external validation.

The addition of Capsicum baccatum to Calabrian monovarietal extra virgin olive oils leads to flavoured olive oils with enhanced oxidative stability

Pierluigi Plastina et al.

Summary: This study evaluated the influence of two different Capsicum baccatum cultivars on the quality parameters of flavoured olive oils. Bishop crown dried extracts had the highest antioxidant content, while Aji Angelo had a higher amount of capsaicinoids. Roggianella EVOO showed the highest antioxidant activity and induction time compared to other samples tested in the study. Additionally, the flavoured olive oil made with Bishop crown dried pepper extract had a longer induction time, indicating better stability.

Volatile Profile of Two-Phase Olive Pomace (Alperujo) by HS-SPME-GC-MS as a Key to Defining Volatile Markers of Sensory Defects Caused by Biological Phenomena in Virgin Olive Oil

Lorenzo Cecchi et al.

Summary: The volatile fraction of olive oil, specifically markers for defects of microbiological origin, was analyzed to discriminate among olive oils with different quality categories. These markers, composed of esters, alcohols, ketones, and α-hydroxy-ketones, but not carboxylic acids, were able to distinguish EVOOs from defective samples.
