Comparative analysis of interfacial composition and structure of fat globules in human milk and infant formulas

Summary: The study analyzed and compared fat globule interfacial compositions and structures in human milk and three types of infant formulas (IF1, IF2, IF3). While IF1 was closer to human milk in terms of interfacial protein composition, it still lacked certain important bioactive proteins. Differences were also found in interfacial phospholipids between human milk and infant formulas, with IF1 having the closest composition. However, the study concluded that despite the inclusion of MFGM, infant formulas did not replicate the fat globule structures found in human milk.

Phospholipid composition and fat globule structure II: Comparison of mammalian milk from five different species

Summary: This study compared the phospholipids (PLs) content, molecular species, milk fat globules size, and microstructure in the milk of five mammalian species. The results showed significant differences in PLs composition among the species, with human milk having higher sphingomyelin (SM) content and more unsaturated fatty acyls. Although the core-membrane lipid structure of mammalian milk was similar, the size distribution was markedly different. These findings provide a basis for developing formula milk that meets the PLs requirements and has a similar milk fat globule structure for infants.
