Value-added salad dressing enriched with red onion skin anthocyanins entrapped in different biopolymers

Summary: This study used red onion skin extract to obtain food ingredients. Two powders with high contents of bioactives and antioxidant activity were obtained, and V2 showed the best storage stability. Increased carbohydrate concentration delivered the best anthocyanins protection. Addition of powder to salad dressings improved the concentration of biologically active compounds and the antioxidant activity. These results suggest that microencapsulation can deliver bioactives from red onion skin as functional ingredients for value-added foods.

Summary: Onion waste products are rich in antioxidants and have antimicrobial and antiproliferative properties, with quercetin 3,4'-diglucoside and quercetin 4'-monoglucoside being the main flavonols. The composition of anthocyanins varies among extracts, and antioxidant assays showed that A. x cornutum had the highest antioxidant power. Additionally, antimicrobial tests revealed that A. x cornutum had greater antimicrobial activity compared to other onion varieties.

Comparative analysis of volatile profiles and phenolic compounds of Four Southern Italian onion (Allium cepa L.) Landraces

Summary: The volatile and phenolic compounds of four onion landraces from the Campania region in southern Italy showed high variability, with distinctive profiles for the Airola landrace. Principal Component Analysis and ATR-FTIR spectroscopy were effective in distinguishing the landraces. These results may support consumer choices based on potential health benefits and encourage biodiversity programs to preserve valuable genetic resources in onion landraces.
