Physical characterization of high methoxyl pectin and sunflower oil wax emulsions: A low-field 1H NMR relaxometry study

Summary: This study investigated the application of pectin-wax-based emulsion systems in preparing edible films and coatings. The addition of suitable concentrations of pectin and sunflower oil wax improved the physical characteristics of the emulsions. Furthermore, NMR relaxometry parameters were found to be effective in monitoring the formation and stability of the emulsions.

Impact of Saltwater Environments on the Coalescence of Oil-in-Water Emulsions Stabilized by an Anionic Surfactant

Summary: The study found that the presence of salt can enhance the stability of oil-in-water emulsions by decreasing the electrostatic repulsion between anionic surfactants and allowing for more dense packing at the oil-water interface. Experimental results indicated the importance of hydration forces at high salt concentrations and small droplet separation distances in preventing coalescence and promoting the formation of a stable Newton black film.
