Lower critical concentration temperature as thermodynamic origin of syneresis: Case of kappa-carrageenan solution

Summary: The widespread application of polysaccharides is limited by low syneresis impact. Our study demonstrated that the thermodynamic instability of kappa-carrageenan polysaccharide is the origin of syneresis and investigated the effects of KCl salt on critical concentration and LCCT. The difference between Tg and LCCT serves as the thermomotive force behind the syneresis of many colloidal gels.
