Revalorization of the Cooking Water (Aquafaba) from Soybean Varieties Generated as a By-Product of Food Manufacturing in Korea

Summary: The cooking water of three novel legumes obtained from Korean soybean foods showed higher values in total polyphenol, total carbohydrate, and protein contents compared to chickpeas. Additionally, these legumes' cooking water exhibited enhanced functional properties, particularly in foaming capacity and stability. Overall, this study suggests the potential of utilizing these legumes' cooking water as a plant-based functional ingredient for vegan product development.
