Developing DHA microcapsules using linear dextrin aggregates of different chain length distributions

Summary: Linear dextrin aggregates (LDAs) were prepared as a novel material for encapsulating docosahexaenoic acid (DHA). The encapsulation efficiency of microcapsules significantly increased with the content of intermediate linear dextrin, while the peroxide value decreased during storage. Molecular dynamic simulations revealed the highest interaction attraction between linear dextrin with a certain chain length distribution and DHA. LDAs with 22% intermediate linear dextrin showed the highest encapsulation efficiency and the lowest peroxide value.
