The gelling behavior of gellan in the presence of different sodium salts

Summary: The study showed that different salts have significant effects on the gelling behaviors of gellan aqueous systems. At low sodium ion concentrations, salts with Cl- or CH3COO- ions promoted gel formation, while at high sodium ion concentrations, all salts facilitated gelation due to the shielding effects.
