Insight into the mechanism on texture change of Wuchang bream muscle during live transportation using a UPLC-QTOF-MS based metabolomics method

Summary: The mechanism of texture change in Wuchang bream muscle during live transportation was investigated using UPLC-QTOF-MS. The hardness of the muscle decreased as transportation time increased, and the cellular and ultrastructure of the muscle fibers were disrupted. Metabolites analysis revealed that the deterioration in texture might be related to changes in amino acid, purine, histidine, and choline metabolism. The results indicated that oxidative stress caused changes in metabolic pathways, leading to muscle cell and fiber destruction in Wuchang bream during live transportation.
