Aromatic profile of Feijoa (Feijoa sellowiana) fruit in protected cultivation, at harvest and after cold storage

Summary: This study aimed to investigate the effect of Protected Environment Cultivation and cold storage on the aromatic profile of Alcantara and Nonante feijoa fruit. Results showed that ester compounds and aldehydes were found in higher proportions in the flesh, while ester compounds and terpenes were found in higher proportions in the peel. Cold storage favored the development of the characteristic aroma of the fruit, reducing herbaceous compounds and increasing fruity/sweet compounds in the aromatic profile.

Summary: This review explores the potential of microorganisms to reduce the beany off-flavor in vegetable proteins. It identifies the volatile compounds contributing to the off-flavor and their formation pathways, and examines the role of alcohol dehydrogenase (ADH) and aldehyde dehydrogenase (ALDH) in reducing the off-flavor. The presence of these enzymes in certain microorganisms is found to be linked to odor improvement. Strains with constitutive ADH or both ADH and ALDH show the best results in reducing the compounds involved in the off-flavor.
