Summary: Different mechanisms can be used to inhibit tyrosinase and prevent quality losses caused by enzymatic browning in fruits and vegetables. This study found that PI/PIA can inhibit the oxidation of L-DOPA by tyrosinase, leading to a conformational change in the enzyme's secondary structure. Further analysis revealed the mechanism of how PI/PIA affects tyrosinase without pre-incubation. The anti-browning effects of PI/PIA were also demonstrated in potato models.

There were limited studies available to compare the efficacy of different metformin formulations outside of diabetes care.
