Characterization of key aroma-active compounds in Bobaizhi (Angelica dahurica) before and after boiling by sensomics approach

Key aroma-active compounds were identified and their correlation with sensory properties established. Major key aroma-active compounds in boiled liquid were linalool and (E)-2-nonenal, showing positive correlation with green and citrus flavors.

Dynamic analysis of flavor properties and microbial communities in Chinese pickled chili pepper (Capsicum frutescens L.): A typical industrial-scale natural fermentation process

Summary: This study investigated the changes in flavor and microbial diversity during the fermentation of pickled chili pepper. The results showed that the hardness and pungency of the chili pepper decreased, while organic acids, amino acids, and volatiles increased during fermentation. Lactobacillus and Candida species were dominant in the pickled chili pepper. Correlation analysis revealed a positive correlation between dominant bacteria and fungi and volatile compounds.

Summary: Creatine supplementation did not affect the growth performance or the content of guanidinoacetic acid in muscle and hepatopancreas, but significantly increased muscular creatine content. A specific level of creatine also significantly improved muscular hardness and chewiness by decreasing myofiber diameter and increasing myofiber density.
