A review on biofilms and the currently available antibiofilm approaches: Matrix-destabilizing hydrolases and anti-bacterial peptides as promising candidates for the food industries

Mohsen Akbarian et al.

Summary: Biofilms, which are communities of microorganisms, can be both harmful and beneficial depending on their location and content. Researchers in various fields are looking for effective strategies to destroy or slow down biofilm formation, especially in problematic areas such as laboratory equipment, water pipes, humid structures, and food packaging machinery. Anti-biofilm strategies can be categorized into plant-based and non-plant-based, with the latter including nanoparticles, bacteriophages, enzymes, surfactants, peptides, and fatty acids. It is often necessary to use multiple strategies to effectively eliminate biofilms. In the food industry, using hydrolase enzymes and peptides extracted from natural sources appears to be the most promising option based on the analysis of potential biofilm inhibition strategies.
