Summary: The aim of this study was to determine the antimutagenic effect of honey and its correlation with the concentration of total polyphenolic content. The results showed that Algerian honey contains high polyphenol content, which varies significantly due to different origins. In addition, all tested honey exhibited an antimutagenic effect against known mutagenic substances, and there is a strong positive correlation between the total polyphenolic content and the antimutagenic properties of honey.

This study examined honey samples from the El Oued region, analyzing their physicochemical properties, antioxidant activity, antibacterial activity, and floristic composition. The results showed that most honey samples were of high quality and met international standards. The composition and activities varied among the different honey types, and there was a significant correlation between antioxidant activity, honey color, polyphenol and flavonoid contents.
