Effect of Lactobacillus plantarum on functional characteristics and flavor profile of fermented walnut milk

Summary: This study found that mild fermentation by Lactobacillus plantarum LP56 can improve the flavor of walnut milk, increase the content of sweet compounds, umami compounds, and unsaturated fatty acids, and enhance the functional characteristics of fermented walnut milk. It also reduces the content of aldehydes and increases the content of alcohols, acids, esters, and ketones, which improve the aroma quality of walnut milk.

Reduction of off-flavor volatile compounds in okara by fermentation with four edible fungi

Summary: This study aimed to reduce beany flavors and introduce new aromatic compounds to okara by fermenting it with edible fungi. Results showed that after fermentation, the off-flavor compounds decreased significantly, and new aromatic compounds were generated, particularly with Wolfiporia cocos CGMCC 5.528. The use of edible fungi, especially Wolfiporia cocos CGMCC 5.528, was found to be an effective and sustainable approach to improve the flavor quality of okara.
